Preparation time

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes
  • Serving: This recipe makes about 4 serving

Ingredients

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • Additional strawberries for garnish (optional)

Instructions

  1. In a medium saucepan, heat the milk over medium heat until it starts to steam. Do not let it boil.
  2. In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until well combined and slightly thickened.
  3. Slowly pour about 1/2 cup of the hot milk into the egg mixture, whisking constantly to temper the eggs.
  4. Gradually pour the tempered egg mixture back into the saucepan with the remaining milk, whisking constantly.
  5. Cook the mixture over medium heat, stirring constantly with a wooden spoon or silicone spatula, until it thickens and coats the back of the spoon, about 5-7 minutes. Do not let it boil.
  6. Once the custard has thickened, remove it from the heat and stir in the vanilla extract.
  7. Transfer the custard to a bowl and cover it with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin from forming. Chill the custard in the refrigerator for at least 2 hours, or until completely cold.
  8. While the custard is chilling, prepare the strawberries by slicing them thinly.
  9. Once the custard is chilled, fold in the sliced strawberries.
  10. Serve the strawberry custard chilled, garnished with additional strawberries if desired.
