- Total Time: 25 minutes
- Serving: This recipe makes about 4 serving
Ingredients
- 2 cups whole milk
- 1/2 cup granulated sugar
- 4 large egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- Additional strawberries for garnish (optional)
Instructions
- In a medium saucepan, heat the milk over medium heat until it starts to steam. Do not let it boil.
- In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until well combined and slightly thickened.
- Slowly pour about 1/2 cup of the hot milk into the egg mixture, whisking constantly to temper the eggs.
- Gradually pour the tempered egg mixture back into the saucepan with the remaining milk, whisking constantly.
- Cook the mixture over medium heat, stirring constantly with a wooden spoon or silicone spatula, until it thickens and coats the back of the spoon, about 5-7 minutes. Do not let it boil.
- Once the custard has thickened, remove it from the heat and stir in the vanilla extract.
- Transfer the custard to a bowl and cover it with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin from forming. Chill the custard in the refrigerator for at least 2 hours, or until completely cold.
- While the custard is chilling, prepare the strawberries by slicing them thinly.
- Once the custard is chilled, fold in the sliced strawberries.
- Serve the strawberry custard chilled, garnished with additional strawberries if desired.
